YOUR HOST
Sofia Rubio
Gastronomist, conservationist & slow food pioneer
Breathe in that sharp Andean air. Let the humid roar of the Amazon fill your chest. Feel your skin bristle under a deep Pacific breeze. Most importantly, taste it all on one trip. Peru is a place where the culinary worlds of geography, immigration, and innovation collide to form one of the world’s most diverse cuisines.
Join us on a route that follows ingredients over landmarks; markets, rivers, farms, home kitchens and small producers shape the days as much as geography does.
You’ll see how cacao is handled before it becomes chocolate, how Brazil nuts move through a forest economy, how earth ovens still anchor everyday cooking in the Andes, and how contemporary Peruvian kitchens carry those traditions forward rather than polishing them away.
We’ve designed the pace to allow for long meals, time in working places, and conversations that aren’t part of the schedule.
Street food with backbone. Nikkei kitchens that reflect migration and technique. Chocolate and coffee at source, not packaged for export. Coastal cooking that belongs only in the capital.
Lima
River travel, canopy walks, and wildlife at golden hour. Forest ingredients that rarely leave the region. Brazil nut harvesting as it happens. Cooking shaped by what grows, hunts and stores well in this environment.
The Amazon
Pachamanca in earth ovens. Botanical spirits and fermentation knowledge. Farm kitchens and open fires. Meals shared in small Andean communities where recipes live in hearts rather than pages.
Sacred Valley
Coffee, local cooking, then time at Machu Picchu.
Machu Picchu
Traditional Andean dishes alongside newer regional cooking. A broader view of how Peruvian food looks today.

YOUR HOST:
Sofia Rubio
You need to see Peru through Sofia’s eyes.
Sofia has led the charge of Peru’s foodie renaissance; creating a much needed bridge between its delicate ecosystems, working kitchens, and farming communities. As a conservationist with a Master’s from Italy’s University of Gastronomic Sciences, she’s spent more than a decade working with indigenous groups to safeguard biodiversity, while reviving ancient food practices, and stewarding native ingredients on a global scale.
Recognized by the World Economic Forum as a Top Innovator, Sofia blends food, culture, and storytelling into real, evocative journeys. Yes, you’ll eat well with Sofia as your host. Obviously. But you’ll also learn what connects Peru’s people, landscapes, and the ideas driving one of the most compelling culinary stories on earth.

Most of our trips have a tip kitty because many cultures have diverse rules when it comes to tips. We’ve found it to be the easiest way to combat over-tipping, under-tipping or having the tip fall into the wrong hands. Our goal is for guests to relax and know that the complexities of tipping are taken care of, on their behalf.
The recommended amount for this trip will be around PEN 923–1,008 (USD 275–30).
-
This trip begins and ends in Lima. We recommend flying into Lima’s New Jorge Chávez International Airport. The same airport is the most convenient option for your departure.
-
Try to arrive before midday on the start day, although earlier would be recommended. If possible, come one day early to settle in.
-
Opportunities to do laundry during your trip may be unpredictable. However, your guide will be able to assist with this during your trip.
-
Your guide will be with you throughout your trip, and is your first point of call for any help you might need.
In the unlikely event of a health or security related incident during a trip, we’ve engaged a local partner to assist. From our experience, there is not one framework that fits all, and every incident is unique and requires a different approach. With all trips, your guides are your day-to-day support. While behind the scenes, there is an active line of communication – between your guide, the on-ground support team, and Australian Ops.
Read our Trip Help Process for more detail.

People who join our trips tend to be well travelled, curious, and comfortable with a bit of looseness in the plan if the food or the moment leads us somewhere better. They care more about what’s real than what’s polished, and they’re happy trading Michelin stars for access, stories, and meals with a point of view. That is, not all white tablecloths and perfectly composed plates; it might mean a plastic stool, a smoky kitchen, a cook who knows their regulars by name, and a dish that carries a bit of history.
We also expect guests to follow our Participation Guidelines; they keep everyone happy, safe, and having fun throughout their adventure.
